This month's theme is Pop the Cork (Sparkling wines from around the world) and features samplings of Crab Ceviche (mango, yuzu & long beans) paired with Mionetto Cuvee Sergio Prosecco, NV (Veneto, Itality); Crispy Skin Pork Belly (poached quail egg & frisee) paired with Roederer Estate L'Ermitage, 2007 (North Coast, California); Saffron Braised Chicken (olive poached marble potatoes & sherry romesco) paired with Chateau Frank Blanc de Noirs, 2009 (Keuka Lake, NY); and Zinfandel Poached Pear Tart (blue cheese crust & vanilla custard) paired with Ruinart Blanc de Blanc Brut, NV (Champagne, France).
