This month's theme is The Empire State (New York wines and local-sourced foods). Each small-plate food tasting features an accompanying wine. Food samplings include Seared Foie Gras with cider gastrique, brioche French toast & blistered cranberry paired with Dr. Frank "Celebre" Cremant (Keuka Lake); Pan-Seared Rainbow Trout with Moroccan spiced squash puree, frisee, & bacon vinaigrette paired with Hermann J. Wiemer Semi-Dry Riesling, 2013 (Seneca Lake); "Age of Darkness" Braised Short Rib with pumpkin agnolotti & crispy Brussels paired with Lamoreaux Landing "76 West" Meritage, 2011 (Seneca Lake); and Stuffed Baked Apple with Painted Goat Farms ricotta, walnuts & maple crisp for dessert paired with Heron Hill Late Harvest Vidal Blanc, 2008 (Keuka Lake).
